We hate it when our options are limited and can’t get our fix of authentic South Indian black tea and whole spices.
But luckily today we are going to share an amazing version of chai that requires no milk, and that has been historically made in Kerala for years!
Enter Suleimani Chai
It’s called Suleimani Chai.
Our signature Suleimani Chai recipe calls for black tea, water, (dried) ginger, cinnamon, mint, and honey.
It’s an amazingly light and refreshing tea, contains very little caffeine, and is commonly drunk alongside every dishes like spicy Biriyani (and other heavier dishes).
This no-milk, low-caffeine version of chai is an inspiration from northern Kerala and the influences from Arab traders that date back centuries.
Our Suleimani Chai Recipe
The key to making this drink is attention and speed. You cannot over steep the tea because it will be too strong. You must keep the black tea and spices over heat for no more than 2 minutes.
